Feista Rice and Beans

i2 cups brown rice
3 cups water
1 medium-large onion, chopped (about 1/2 cup)
1 tablespoon chili powder
1 15-oz can chopped tomatoes
1 15-oz can kidney beans, drained

Pour water in the pot. Add brown rice, chili powder, and stir. On top of the rice, add the onions, tomatoes, and kidney beans. Do not stir (it will keep the beans from sticking or burning). Bring to a boil, reduce heat, cover and simmer for 45 minutes. It should still be moist, but not swimming in liquid at the end of the cooking time.

Serve. You can spoon on a bit of the Fiesta Sauce below if you like.

Feista Sauce

This past week I created a new sauce to go over baked potatoes. It was good both over the potatoes and drizzled over the Feista Rice and Beans I will post later.

1 box soft silken tofu
1 heaping teaspoon white miso paste
your favorite salsa

Blend the miso and tofu together with a hand blender or in a blender jar, until the tofu has a yogurt-like consistency. Stir in salsa (about 2-3 tablespoons full), until it has a pinkish color and a mild salsa taste (you don't want to overpower the miso and tofu so that it tastes only like salsa). Spoon over baked potatoes or use in tortillas or over Fiesta Rice and Beans.

In my opinion, it has the flavor of yogurt with salsa, but you may have a different opinion. Both I and my omni husband enjoyed this.

End of school year and progress report

You may have noticed, if you have visited my blog, that I have not updated it in a while. This is due to two things: phone problems for a week, and the end of the school year.

I just finished writing one of the finals I must turn in tomorrow, and needed a break. So, here I am.

My weight loss is going well; slow and steady. I am down 20.8 pounds as of my weigh in last Tuesday, from my initial weight upon rejoining Weight Watchers. I am down a total of 27.8 pounds from my peak weight back in February 1998. Of the 20.8 pounds I have lost, 18 were gained in the year and a half after I re-married. We had a year of celebrations at the homes of others. It had its toll. I am re-learning how to deal with the challenges celebrations present as I go along on this weight loss odessy.
